Salad:
1 semi-ripe mango
1 Euro seedless cucumber
1 can of hearts of palm
2 cups of candied macadamia nuts
32 ounce sweet spring lettuce mix
1. Peel mango and julienne cut.
2. Peel cucumber and julienne cut.
3. Julienne cut hearts of palm.
4. Place lettuce in large bowl and combine with mango, cucumber and hearts of palm.
5. Add 1 cup of passion-fruit vinaigrette (see recipe below) and toss gently.
6. Place 8 ounces mixed salad on plate.
7. Garnish with candied macadamia nuts (recipe follows).
Passion Fruit Vinaigrette
8 ounce jar of passion fruit puree
1 cup honey
1 teaspoon salt
1 teaspoon ground coriander seed
1 tablespoon lemon juice
1 small piece of minced fresh ginger
1 clove fresh minced garlic
2 cups vegetable oil
1 tablespoon vanilla extract
1. Put all ingredients except oil in a blender. Mix on medium speed.
2, Slowly add in oil continuing to blend.
3. Add cup of water if needed for consistency.
Candied Macadamia Nuts
1 cup water
1 cup sugar
2 cups whole macadamia nuts
1. Place water and sugar in saucepan on medium heat stirring until caramelized.
2. Add macadamia nuts, mix and spread onto a baking pan.
3. Place in fridge until cool.
