Cazuelitas de Gambas Shrimps with Tomatillo Sauce and Feta Cheese – Amazing Simplicity

Ingredients
Serves 2 to 4
4 tablespoons olive oil, divided use
1 pound tomatillos, husks removed, chopped
1⁄2 onion, chopped
2 cloves garlic, minced
1⁄4 cup cilantro, chopped
1⁄2 teaspoon sugar
Salt and pepper, to taste
1 pound shrimp, peeled and deveined
Lemon juice, to taste
Feta cheese, crumbled
Directions
1. Heat 2 tablespoons oil, add tomatillos, onion, garlic, cilantro and sugar. Cook together about 1 hour.
2. Mash to eliminate lumps, then season to taste.
3. In a sauté pan, heat remaining oil and sauté shrimp quickly, just until opaque. Sprinkle with lemon juice to taste.
4. Place sautéed shrimp in an ovenproof dish and add tomatillo sauce as needed to cover.
5. Liberally sprinkle with crumbled cheese and place under broiler or in 375-degree oven to melt cheese and brown slightly. This may be made in one dish, or individual dishes.
